Crispy Chicken Strips

I needed something quick and easy tonight and this chicken fit the bill. It only used a few ingredients (I like that!) and my 3 year old ate it and said it was good. It didn't take long to make either, which was an extra plus. I served it with tater tots and some vegetables and dinner was served! Crispy Chicken Strips

3/4 lb. boneless skinless chicken breasts

1/2 cup mashed potato flakes

1/2 cup seasoned bread crumbs

1 egg

2 Tbsp. olive oil

Flatten chicken to 1/2" thickness. Cut into 1" strips. In a shallow bowl, combine potato flakes and dry crumbs. Beat egg lightly in another shallow bowl. Dip chicken in egg, then in potato mixture. In a skillet, cook chicken in oil 4-5 minutes or until chicken is golden brown and crispy and juices run clear. Yield: 3 servings.
